Today, I want to share a recipe that I think is a wonderful way to control your AM blood sugars and keep your cholesterol low. It’s a breakfast pancake recipe that is made using oatmeal and let’s you create a higher fiber meal with little to no effort or change in taste. These are delicious!
Oatmeal Pancakes
Ingredients:
1 cup whole wheat flour
1 cup all purpose flour
1/2 cup brown sugar
4 tsp baking powder
1/2 tsp salt
1 cup cooked oatmeal
2 cups skim milk
4 egg whites
1/4 cup olive oil
1/4 cup applesauce
Instructions: Place your flours, brown sugar, baking powder and salt in a bowl. Mix together gently. Set Aside. Then, mix cooked oatmeal, milk, egg whites, olive oil and applesauce together in a separate bowl. Now, add the dry ingredients (flour mixture) to the wet ingredients (oatmeal mixture) a little at a time, stirring to combine well until you have smooth batter. Next, heat a 12 in skillet and pour your batter onto the hot skillet in 1/4 cup increments. As the mixture cooks, you will see bubbles on the top of the pancakes, which indicates they are ready to be turned. Flip them over, cook another few moments and they are ready! Use low sugar syrup if required and enjoy your high fiber pancakes.
